Cucumber Slaw

This vinegar based slaw is lower in carbs, fat, and calories than mayonnaise based slaws, so it’s a healthier option for your fresh produce.



  • 2 cucumbers - quartered, seeded, and thinly sliced

  • 2 carrots, shredded

  • 1/4 onion, grated

  • 2 tablespoons white sugar

  • 1 1/2 teaspoons ground coriander

  • 1 teaspoon kosher salt

  • 1/2 teaspoon coarse ground black pepper

  • 1/4 cup apple cider vinegar


Combine cucumbers, carrots, onion, sugar, coriander, salt, and black pepper together in a bowl; add vinegar and mix well.
