Okra, Tomatoes, and Shrimp

 

A simple recipe for summer flavor.

 

4 tablespoons Extra Virgin Olive Oil
4 cloves of Garlic, chopped
¾ teaspoons White Pepper*
½ teaspoon sea salt*
2 cups Sliced Okra, about 0.6 pound
2 medium Tomatoes, diced
¾ pounds uncooked, peeled and deveined medium Shrimp
1 cup Water

 

(*adjust sea salt and white pepper to taste)

 

Heat olive oil over medium high heat, add garlic and cook 2-3 minutes, until begins to brown.

 

Add white pepper and salt, and stir to mix.

 

Add okra, and cook until begins to brown, stirring occasionally, about 3-4 minutes.

 

Add tomatoes and water, heat to boiling, add shrimp, cover and cook, stirring occasionally, until shrimp turns pink, about 5-6 minutes.

 

Serve over rice.
